Pecorino Cenere is a hard cheese that represents a bold evolution of dairy tradition. Originating from the southern regions of Italy, this cheese pays tribute to centuries-old cheesemaking mastery.

Produced with sheep's milk from animals primarily fed with forage from the local area, after forming, the aging process extends for at least 30 days. Once completed, it is sprinkled with oak ash, and the cheese rests for at least 30 days before being introduced to the market.
